I attempted to make homemade Turkish delight today. The recipe made it sound easy, especially the straining part to remove any lumps that may have formed after combining the molten sugar with a mixture of corn flour and cream of tartar. What they didn’t say was that nearly an hour later with aching arms you would still have well over ¾’s of the mixture still in the sieve and only a few drops of lump-free Turkish delight in your carefully lined tin. Well after more time and a considerable amount of effort I had most of the mixture lump free, by which point I realised I had forgotten to add the rose water and pink food dye so I had to settle for plain lemon Turkish delight. It is not the most attractive of things so I refrained from photographing it, and the proof of whether all that labour was worth it will be in a few days after it has ‘hardened’ slightly and been covered in icing sugar.
One warning, it is very sticky stuff and gets everywhere, but was quite enjoyable to make.
